We eat lots of sweet potatoes. Not only are they delicious, but they are full of vitamin A, potassium, and vitamin C. Sweet potatoes may also help fight cancer, heart disease, and asthma. They are a healthy alternative to regular white potatoes.
This is a great side dish to enjoy any day of the week.
What you need for this recipe:
3 medium sweet potatoes
Non-stick olive oil non-stick spray (make sure its 100% olive oil, no regular PAM allowed)
Salt and Pepper
1 1/2 tsp. oregano
3/4 c. of 1% milk
3 tbsp. panko bread crumbs
Here I used a 4 x 8 loaf pan, you can whatever size just as long as you have at least 3 layers of potatoes
Start by washing, peeling, and slicing your sweet potatoes into thin slices.
Start layering your potato slices into the greased casserole dish. After each layer, sprinkle salt, pepper, and oregano onto the potatoes. Then spray each layer with the olive oil spray. Spraying the oil helps to control how much you use. It makes it easy not to add too much fat. Continue this process until all the potatoes are in the dish and you have used all of the oregano.
After you have all of your layers, pour the milk over the potatoes. It should cover the bottom of the dish, but shouldn't cover very many layers of potatoes. Sprinkle the panko bread crumbs on the top. Bake on 400 degrees for 20-25 minutes or until potatoes are tender and topping is golden brown!
